An apple streusel cake a day…

I heard the other day that we’re not meant to be eating five portions of fruit and veg a day, we’re meant to be eating eight. I mean, who has time to eat that much every day? We’d be munching all the time. But – if you’re concerned that you’re not getting your vitamins, then get your snack on with this apple streusel cake (OK, so it’s probably not very healthy, but it does taste divine!)

Recipe time!


– 115g butter

– 450g cooking apples

– 175g self-raising flour

– 1tsp ground cinnamon

– Pinch of salt

– 115g caster sugar

– 2 eggs

– 1-2tbsp milk

For the topping:

– 115g self-raising flour

– 85g butter

– 85g caster sugar


– Preheat the oven to 180 degrees C, grease a 9-inch cake tin and peel, core and thinly slice your apples

– Beat the sugar and butter together, then add the eggs, flour, salt and cinnamon, before folding in the milk

– Spoon into the tin and then cover with apples

– Make the topping by sifting the flour into a bowl and rubbing in the butter and stirring in the sugar

– Sprinkle evenly on the top of the mixture and bake for one hour or until firm to the touch

– Once cool, add some magical dusting of icing sugar and then grab a knife and fork. Just like grandma used to make!
