A vanilla cupcake celebration

Since my High Tea linky party is back on again this week (you can add your posts until tomorrow at 16:00, so hurry, hurry and link them up for the world to see) I thought I’d whip up a batch of cupcakes as a treat for you all. They’re very vanilla-y, moist and delicious, so I hope you give them a go.

Recipe time: Vanilla cupcakes

Ingredients:

– 250g unsalted butter

– 250g caster sugar

– 4 eggs

– 60g plain flour

– 185g self-raising flour

– 185ml milk

– 1tsp vanilla extract

For the icing:

– 300ml soured cream (don’t be put off – the icing’s so tasty!)

– 250g white chocolate chips

– Extra chips for decorating

Method:

– Preheat the oven to 180 degrees C

– Combine the sugar and butter, beating until pale and creamy

– Add the eggs one at a time, followed by the vanilla and then add the flour, folding it in while adding the milk

– Add to muffin cases and bake for 20 minutes

– While the cupcakes are cooling, melt the chocolate chips

– Once cooled add the soured cream and leave it until it sets a bit (I didn’t do this and I couldn’t do fancy-schmancy icing because it was all so very gloopy). Once it’s set, start icing, decorate with a few more chocolate chips and then get your munch very firmly on. (And look, look, look – it’s the cupcake stand I made for the last linky party, being put to excellent use!)
